JELL-O Gelatin Poke Cake Recipe

I actually learned how to make this one from my step mother, she is the master at the Christmas Jell-O cake in my family.
During Christmas I make a two layered Jell-O cake using the colors green and red for the inside of the cake. You can achieve this effect by using Lime Gelatin for the first layer and Strawberry or Cherry Gelatin for the second layer.
FOR BEST RESULTS-
- Use White Cake Mix (which ever brand you find that is on sale).
- Preheat oven at 350F. while preparing cake mix.
- Follow the directions on the back of the box to prepare mixture.
- You can use any cake shaped pan you want. 13 x 9-inch non-stick metal pan, 9 inch round non-stick pan or a bundt cake pan.
- For this recipe I used (2) 13 x 9-inch non-stick metal pans.
- I lightly buttered and floured each pan that I was going to use and set them aside. You can use shortening or cooking spray to substitute the butter for the pan.
- Once the cake mixture was smooth, I poured it into each pan.
- Bake for 32 minutes.
- Once the timer went off I removed the pans from the oven and placed them on a safe surface away from my little one to cool for an hour.
PICK JELLO FLAVOR/COLOR YOU WILL BE USING-
I will pick the two I used for my Christmas cake in the photo above.
- 1 box (4-serving size) Strawberry gelatin
1 box (4-serving size) Lime gelatin - To prepare gelatin, use instructions on box. Use 2 small bowls, one for each color
- Now you are ready to begin poking your cake! Leave the cake in the pan. Start poking holes all over cake with a toothpick or fork.
- Use ladle to pick up lime mixture and pour over one cake. Do the same with the other layer using Starwberry mix.
- Cover each cake pan with plastic cover or plastic wrap and place them into refrigerator overnight (this gives you best results with Jello).
- The following day, remove cake from pan gently, it can break easily because of the moisture from the Jello. You may need someone to assist you in placing each cake on a cake tray.
- Once you have safely moved the cake over to the tray you will be using, frost with coolwhip.
- Next bring the other cake over and place on top of first layer you frosted, gently. Frost second layer with cool whip. Decorate any way you'd like.
- Store covered in refrigerator until you are ready to serve. After each serving place in refrigerator to keep fresh. Good for one week.

kashmir56, make sure you keep it refrigerated after every serving. It is a cake you eat cold because of the Jell-O and Cool whip topping being used. If left out it will go bad. You are going to love it!

I made this cake once (in New Zealand) from scratch .as Instant Cake Mixes are pricey.
My hubby is American and kept talking about 'this cake' ,of course he had no recipe and no name for it-he figured everyone knew how do make it(men)-hahaha...
Well mine did turn out ,more good luck than good management, so I thankyou heaps for a recipe -finally.
Now Im in the states ,cant wait to check out all the Jelly colours too!!
